Shui Xian 2023 - Oolong Tea
Shui Xian, meaning "Water Sprite" or "Narcissus" in English, is rock tea (or Yancha) originating from the Fujian province in China. This tea has a history of over a thousand years, with its distinctly large, robust leaves. The trees of Gao Cong Shui Xian are 30-60 year old, lending the tea a delightful sweetness and smooth taste that is brought out by a medium roasting process.
The aroma is strong yet soft, with hints of woodiness and brown rice. The flavour is rich, thick, and smooth, with the familiar quality of rock tea and a strong astringency when brewed with higher tea content.
Rock teas are known for their strong mineral flavour. This, in addition to the polyphenols and caffeine, can add to a bitter, astringent flavour in the brewed tea. We advise experimenting with quantity of tea leaves, water temperature, and brewing time to find the flavour that is best suited to you.
We source our teas as close to the original producer as possible, while other brands are often multiple steps removed from the original producer, our Chinese tea is sourced directly from the single farm which produces them, ensuring as much profit as possible goes to the people growing and blending the tea, and keeping these communities thriving.

Each cup you enjoy places 25sqm of endangered land under protection, so you can enjoy your tea knowing you're helping the environment, and the communities of those growing the tea.
